Grocery Challenge 2012: Update 3

My lunch today. In all its glory.
Cookie sammiches, pretzels, tuna/noodle salad, English Breakfast & A Perfect Stranger by Danielle Steel - excuse the lack of cover. It was $0.25 at a garage sale, beggars can't be choosers, right?

You'd never know we haven't grocery shopped since practically April. Except the lack of zip-top baggies, those were drained weeks ago. Plastic wrap hit the can this week too. We've reached the time of aluminum foil.

Last night I boiled the last full box of pasta - those little cuties in the tuna/noodle salad. I made the recipe up as I went, assuming it would taste alright. I was correct! I used:

  • 8 green onions
  • 1 box of cute, tiny noodles
  • 1 pouch tuna (in sunflower oil)
  • 1 C mayo
  • Salt
  • Pepper
...because that's all we had to put in it! Bill and I contemplated using other condiments for flavor, and decided simplicity is key so we left well enough alone. It's a tasty little lunch salad! We each took it for lunch today and I probably have 3 servings left. 

A few weeks ago a friend of mine asked if I had any fruit-flavored ice pops in the freezer. I found a box on top of our fridge (oh, the things I find in our kitchen...) and sighed relief that it was one less item we HAD to eat before we moved in fear of melting/creating a mess. Well, guess what I found while digging in the freezer....a big stinking pile of fruit-flavored ice pops. Dang nabbit. Guess they're next for dessert after our mini cookie sammiches!! Perhaps I'll "pay" the friends & family who help us move in ice pops rather than beer & pizza? Just kidding. If you're helping us move, you will get beer & pizza (and ice pops, if you want them)

  1. Next time add frozen peas to the tuna/noodle. Run frozen peas under cold water to thaw and then add to the bowl with the tuna/noodle. GREAT crunch and tastes sweet from the peas. Something my mom used to make all the time (and it makes for more left overs) :)
