Oatmeal Energy Bites

My son may not be the only spoiled one.... I love to bake for my husband. And cook for him. And clean. No, seriously I do love doing these types of things – call it my way of showing my love for him. To me, nothing can compare when he takes a bite of something I made and says, "Mmmm. This is good!" It just makes my whole heart warm and fuzzy.

Because I love on-the-go breakfast options, I usually bake muffins for Bill to eat for breakfast on his drive to the office. I wanted to find a healthier alternative using oatmeal, since it's basically a health super-food and stumbled upon this recipe on Pinterest (from fitsugar.com).

After making a few adjustments to suit our style, I have perfected the recipe for Oatmeal Energy Bites.

Oatmeal Energy Bites
1 C peanut butter
1 C honey
1 C dried fruit/nut mix
3 C rolled oats
shredded coconut

Mix peanut butter, honey, fruit/nuts and oatmeal together until combined. Form into balls using small scoop and roll through shredded coconut. Bake at 350ยบ for 15-20 min until coconut is toasty. Enjoy!

"WHAT?! PEANUT BUTTER?!!"
Roll in coconut
Cram them on the sheet - they don't spread! 

Ta-da!! Toasty, nutty, oaty delicious bites. 
That's it! They are so simple I can whip up a batch in no time and they make the whole kitchen smell sweet and nutty. They are sweet enough to eat after dinner as a cookie and filling enough to snack on while you run out the door and hold you over until lunch!
