It's finally SNOWING here! It really feels like winter!
For the first time, Hubs got to break out the snowblower today and the perfect amount of chill in the air for this snow to fall encouraged me to do a little winter baking.
Who am I kidding, every Saturday I love baking because I'd rather do that then the chores looming around the corner!
Today I made a recipe I absolutely love: Whole Wheat Doughnuts. I can eat more than one without feeling guilty because there is very little sugar in the recipe, but they are fluffy and sweet from the whole wheat flower and honey.
I found this recipe on Pinterest (shocker) so I can't take any credit, the original recipe is from Health.com:
Ingredients
Nonstick cooking spray
1 cup whole-wheat flour
1 cup all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup low-fat buttermilk (1%)
2 large eggs
1/4 cup honey
2 tablespoons melted butter
1 tablespoon vanilla extract
Preparation
1. Preheat oven to 425°. Lightly coat a doughnut pan with cooking spray.
2. Combine flours and next 4 ingredients (through salt) in a large bowl, stirring well with a whisk.
3. Combine buttermilk, eggs, honey, butter, and vanilla, stirring well with a whisk. Add buttermilk mixture to flour mixture; whisk just until combined.
4. Spoon batter into doughnut pans, filling twothirds full. Bake in middle of oven until doughnuts spring back when touched and are golden on bottom (about 8 minutes). Let cool in pan slightly (about 4 minutes); turn out. Coat with toppings, if desired.
I top mine in cinnamon/sugar or melted chocolate, but the recipe on Health.com has lots of fancy glazes and topping ideas.
I also use a cute little "Babycakes" maker rather than the oven. See?
It's cute, it's yellow and it makes doughnuts. I'm in love :)
I can't forget the main event of the day: Bill breaking out our snowblower for the FIRST time. (Note: he doesn't really believe in wearing coats)

YUM! I think I need a donut pan! Also, where are Bill's gloves and hat? He's making me cold just looking at him!
