Remember how I told you our fridge was virtually empty? This is how Bill chose to fill it. In his text to me, he sent this photo with the caption "What a fridge should look like!"
In other news, our potatoes from the CSA started looking uncomfortably mushy, so I whipped up a snappy little potato salad (I added mustard to that recipe & used apple cider vinegar) so we've been eating that since yesterday. This Challenge is proving to be a lot more fun than I thought. We're starting to get really creative with the stuff we have left! Sure, we're eating like college kids but it's fun, we don't mind, and it makes a heck of a great story to tell :)
Tonight I made Garbage Granola Bars again - this time using coconut, heath bar pieces, more dry milk (realized the dry milk package has a recipe for trail mix bars using 1 cup), a few raisins I found & a brown sugar simple syrup I used to bind it all together since we are out of honey. I also used about 3/4 cup of water this round, as the last batch the oats were a little too raw for me. Yesterday I visited the dentist & she said my gums looked raw. When I told her about the granola she said "Maybe a little less crunchy next time?" Okay, okay, I can take a hint.
I hope everyone had a wonderful weekend, I know we did! The countdown is now approaching 30 days. Oh boy, oh boy!
**UPDATE** This batch of granola bars is an inch away from being TERRIBLE. Really, terrible. Follow the first recipe. This one is BAD BAD BAD!
