Our Favorite Potato Soup

Fall is here! In our house, that means lots of warm, comforting foods. This potato soup recipe is one I created for Bill, since he loves that special ham product that comes in a can... Yep, SPAM. It's always in our pantry and I had to find SOMETHING I could use it for, because I do not support frying it up and eating it with eggs. This is the perfect application because cubed up, I don't really notice it in the soup.

POTATO SOUP 
Makes 8-10 servings

2 lbs baking potatoes - peeled & diced into small cubes
.5 lb red potatoes - diced into small cubes
1.5 large boxes of chicken stock

1 small onion finely diced
2 cloves garlic - minced
1 can spam - cubed / 1.5C Cubed Ham
1C Sour Cream
2C Shredded Cheddar Cheese
1T Chopped Chives
1.5C Milk
Salt
Pepper

Sautee ham cubes with onion & garlic until ham is browned.



  
Add all potatoes and enough stock to just cover the top of potatoes. 



 Bring to a boil & boil until potatoes are done. 


  
Add remaining ingredients, including salt & pepper to taste & let simmer another 10-15 minutes.


Serve & enjoy :-)  Yum!!
